Semolina is a good source of carbohydrates, dietary fiber and protein. In addition, semolina is rich in copper, phosphorus, iron and magnesium, and vitamin B1, pantothenic acid and folates. Semolina products have a lower glycemic index than those from ordinary wheat flour.
Semolina contains gluten, but sometimes it happens that it is tolerated by people with celiac disease, which is due to differences in the content of gluten proteins: gliadin and glutenin.
